Zucchini Pasta with Herb Butter

Ultra Malbec | 4 servings
  • Bring a large pot of salted water to a boil.
  • Place a little oil in a skillet and cook the zucchini, a few pieces at a time, until lightly browned on both sides.
  • Mix the bread crumbs and olive oil in a bowl. The mixture should be quite moist.
  • Place de mixture in a skillet and brown slowly over low heat, stirring often.
  • Mix the butter with the herbs and lemon zest.
  • Add the pasta to the boiling water and cook until aldente.
  • Drain well and place in a large bowl, add the herb butter and mix well. Add the zucchini.
  • Top whit the fried bread crumbs and abundant parmesan cheese and serve.

100 gr Softened butter

2 cdas. Fresh herbs of choice

Lemon zest

4 cdas. Fine bread crumbs

Parmesan cheese, grated

Olive oil
